How to Make Irish Pancakes
Irish pancakes are thin and flat pancakes, not the fluffy and 'fat' pancake style most often served across North America. They're still as delicious, just of a different texture and weight, and you can add the same tasty toppings that you'd normally use. Ideal for Shrove Tuesday or for a quick snack when the kids are starving, Irish pancakes are easy to make and plate up.
- Serves:12-15 small pancakes
1 cup all-purpose flour
1/2 teaspoon salt
4 large eggs
1 and 1/2 cups milk
1/4 stick butter (2 oz melted)
1/4 stick melted butter (for frying)
Fresh squeezed lemon juice (2 lemons)
1/2 cup sugar (for serving)
Put the flour and salt in a large bowl.Make a well in the middle of the flour, place the eggs inside the well. Pour the milk in and a tablespoon of oil.
Stir from the center, gradually incorporating the flour from the edges.Ensure to stir until all the eggs, milk and oil are well combined. Beat with a whisk, until a paste forms, smooth and thick. Add a little milk if the mixture is too thick.
- Add a good portion of milk to mix well to remove any lumps from the batter.
Continue mixing, continuously pouring in all of the remaining milk.Continue until a thin paste forms, similar in consistency to sour cream.
Let the batter rest for about 30 minutes.This will allow the starch in the flour to swell. This increases the lightness of the pancakes when cooked.
Place the pan over the stove.If the pan is the ideal temperature, the batter should be cooked on one side for about 30 seconds.Heat the pan on medium heat. Rub with a paper towel soaked in oil. Using a ladle, pour the batter into the pan, moving the pan to cover the entire surface with a thin and uniform composition.
Using a round bladed knife, pick the pancake up and turn over quickly.Avoid creating folds and creases.
Cook for another 30 seconds, then transfer immediately to a hot plate.The pancakes can be served as they are or are placed one above the other like a set.
Serve immediately.Serve with the standard pancake toppings, such as syrup, squeezed lemon juice or cream.
