This savory summer pie makes use of the season's ripe, juicy tomatoes, and is perfect for a casual brunch.

Yields:
Ingredients
1/2 c.
1 tbsp. cornstarch
container ricotta cheese
large eggs
1/2 c. chopped basil
1/2 c. Grated Parmesan cheese
1/4 c. sliced green onions
1/2 tsp.
tomatoes
Directions
  1. Whisk milk and cornstarch in large bowl, then whisk in ricotta cheese, eggs, basil, Parmesan cheese, green onions, and salt; pour into nonstick 10-inch skillet with oven-safe handle, top with sliced tomatoes, and bake at 375 degrees F for 35 to 40 minutes or until set and puffed.
