Chocolate Walnut Caramel Tart

Ingredients
Shortbread Crust
10 tbsp. butter
1/2 c. confectioners' sugar
1 tsp. vanilla extract
1 1/2 c. all-purpose flour
Walnut Caramel Filling
2 1/4 c. granulated sugar
1/2 c. heavy or whipping cream
1/2 c. butter
walnuts
Chocolate Ganache
1/2 c. heavy or whipping cream
1 tbsp. granulated sugar
1 tsp. butter or margarine
semisweet chocolate
1 tsp. vanilla extract
Directions
  1. Prepare Shortbread Crust:Preheat oven to 325 degrees F. In large bowl, with mixer on medium speed, beat butter and confectioners' sugar 2 minutes or until light and fluffy, occasionally scraping bowl with rubber spatula. Beat in vanilla. Reduce speed to low; beat in flour until combined. Transfer dough to ungreased 11-inch tart pan with removable bottom.
  2. To prevent dough from sticking to fingertips, place sheet of plastic wrap over dough, then press dough over bottom and up side of pan. Remove and discard plastic wrap. Prick dough all over with fork. Bake crust 27 to 30 minutes or until golden. Cool in pan on wire rack.
  3. Prepare Walnut Caramel Filling:In 4-quart saucepan or 12-inch skillet, heat granulated sugar over medium-high heat until melted and amber in color, 8 to 9 minutes, swirling pan frequently. Remove pan from heat. Carefully add cream (mixture will boil rapidly) and stir with wire whisk until a smooth caramel forms. Stir in butter and walnuts. Remove pan from heat.
  4. Place tart pan on cookie sheet for easier handling. Pour filling into cooled crust. Refrigerate tart to set filling while making ganache.
  5. Prepare Chocolate Ganache:In 1-quart saucepan, combine cream, sugar, and butter, and heat to boiling over medium heat; remove saucepan from heat. Add chocolate to cream mixture and whisk until melted and smooth. Stir in vanilla.
  6. Remove tart from refrigerator. Evenly spread ganache over filling. Return tart to refrigerator. Refrigerate at least 3 hours or until set. Remove side of pan. Let tart stand at room temperature 30 minutes to soften slightly before serving.
